Ingredients
  

  • 1/4 cup chia seeds
  • 1 cup milk of choice cold (dairy, almond, oat, or coconut)
  • 2 tablespoons raw honey or to taste
  • 1/2 teaspoon pure vanilla extract
  • Pinch of sea salt

Method
 

  1. In a medium bowl or mason jar, combine the chia seeds, milk, honey, vanilla extract, and sea salt. Whisk or stir vigorously for 30 seconds until the honey is fully dissolved and the chia seeds are evenly distributed.
  2. Let the mixture sit for 10 minutes at room temperature, then stir again thoroughly to break up any clumps that settled to the bottom.
  3. Cover the bowl or seal the jar and refrigerate for at least 4 hours, but preferably overnight (8-12 hours) for the creamiest texture.
  4. Before serving, give the pudding a good stir. If it's too thick, add 1-2 tablespoons of milk and mix until you reach your desired consistency.
  5. Divide into serving bowls or jars and top with fresh berries, sliced bananas, granola, shredded coconut, nuts, or a drizzle of extra honey.
  6. Serve chilled straight from the refrigerator and enjoy within 4 days for best quality.
