Ingredients
  

  • 1 cup cold brew coffee or strong brewed coffee cooled
  • 1 cup unsweetened almond milk or milk of choice
  • 1/4 cup chia seeds
  • 2 tablespoons pure maple syrup
  • 1 teaspoon pure vanilla extract
  • 1/8 teaspoon fine sea salt
  • 2 tablespoons coconut flakes for topping
  • 1/4 cup fresh berries for topping

Method
 

  1. In a medium bowl or large jar, whisk together the cold brew coffee, almond milk, maple syrup, vanilla extract, and salt until well combined.
  2. Add the chia seeds and whisk vigorously for 30 seconds to prevent clumping and ensure even distribution throughout the liquid.
  3. Cover the bowl or seal the jar and refrigerate for 10 minutes, then remove and stir again to break up any seeds that may have settled at the bottom.
  4. Return to the refrigerator and chill for at least 4 hours or overnight, allowing the chia seeds to fully absorb the liquid and create a thick, pudding-like consistency.
  5. Before serving, stir the pudding well and check the consistency. If it's too thick, add 1-2 tablespoons of milk and stir until you reach your desired texture.
  6. Divide the pudding into four serving bowls or jars, then top with coconut flakes, fresh berries, or your favorite toppings just before eating.
