Ingredients
  

  • 4 ripe passion fruits halved and pulp scooped out
  • 2 tablespoons honey plus more for drizzling
  • 2 cups full-fat Greek yogurt plain
  • 1 teaspoon vanilla extract
  • 1 cup granola homemade or store-bought
  • 2 tablespoons toasted coconut flakes optional

Method
 

  1. In a small bowl, combine the passion fruit pulp with 2 tablespoons honey, stirring until well mixed. Set aside to let flavors meld while you prepare the yogurt.
  2. In a separate medium bowl, whisk together the Greek yogurt and vanilla extract until smooth and creamy. Taste and add a drizzle of honey if you prefer sweeter yogurt.
  3. Choose 4 clear serving glasses or jars. Spoon 2-3 tablespoons of vanilla yogurt into the bottom of each glass, spreading it evenly.
  4. Add 1-2 tablespoons of the passion fruit mixture over the yogurt layer, letting some drip down the sides of the glass for visual appeal.
  5. Repeat the layering process with another yogurt layer, then passion fruit, until glasses are nearly full. You should have 2-3 layers of each depending on glass size.
  6. Just before serving, top each parfait with granola, distributing it evenly across all glasses. Sprinkle with toasted coconut flakes if using.
  7. Serve immediately for maximum crunch, or refrigerate without granola for up to 2 days. Add granola within 15 minutes of serving to maintain texture.
