  • 2 cups plain full-fat Greek yogurt chilled
  • 1/2 cup prepared lemon curd homemade or store-bought
  • 1 cup granola or crushed graham crackers
  • 2 tablespoons honey plus more for drizzling
  • 1 teaspoon vanilla extract
  • Fresh berries for garnish optional
  • Lemon zest for garnish optional

Method
 

  1. In a medium bowl, stir together the Greek yogurt, honey, and vanilla extract until smooth and evenly combined.
  2. Gently fold the lemon curd into the yogurt mixture with just 2-3 strokes to create beautiful marbled swirls, leaving visible streaks of yellow throughout.
  3. Select 4 clear serving glasses or mason jars. Spoon about 3 tablespoons of the lemon-yogurt mixture into the bottom of each glass.
  4. Add a layer of granola or crushed graham crackers over the yogurt, using about 2 tablespoons per glass.
  5. Repeat the layering process one more time, ending with a final yogurt layer on top.
  6. Finish each parfait with a sprinkle of remaining granola, a drizzle of honey, and optional fresh berries or lemon zest.
  7. Serve immediately for maximum crunch, or refrigerate covered for up to 4 hours and add the final crunchy topping just before serving.
