Ingredients
  

  • 1 tablespoon dried culinary lavender buds
  • 1 cup boiling water
  • 1/2 cup honey preferably raw or local
  • 1 cup freshly squeezed lemon juice from about 6-8 lemons
  • 4 cups cold filtered water
  • Ice cubes for serving
  • Fresh lavender sprigs optional for garnish
  • Lemon wheels optional for garnish

Method
 

  1. Place the dried lavender buds in a heatproof bowl or measuring cup. Pour the boiling water over the lavender, stir gently, and let steep for exactly 5 minutes.
  2. Strain the lavender water through a fine-mesh sieve into a large pitcher, discarding the lavender buds. While the liquid is still warm, add the honey and stir until completely dissolved.
  3. Add the freshly squeezed lemon juice to the pitcher and stir to combine. Taste the mixture — it should be concentrated and quite strong at this point.
  4. Pour in the cold filtered water and stir well. Taste and adjust sweetness or tartness as needed by adding more honey or lemon juice.
  5. Refrigerate for at least 30 minutes to allow the flavors to meld and the lemonade to chill completely.
  6. Serve over ice in tall glasses, garnished with fresh lavender sprigs or lemon wheels if desired. Stir before serving as honey may settle slightly.
