  • 1 cup milk of choice dairy, almond, oat, or coconut
  • 1 1/2 tablespoons honey plus more for drizzling
  • 1/2 teaspoon pure vanilla extract
  • 1 pinch sea salt

Method
 

  1. In a medium bowl or mason jar, combine the chia seeds, milk, honey, vanilla extract, and sea salt. Whisk vigorously for 30 seconds until the honey dissolves and the mixture is well combined.
  2. Let the mixture sit for 10 minutes at room temperature, then whisk again thoroughly to break up any clumps that have formed at the bottom. This second stir ensures an even, creamy texture.
  3. Cover the bowl or seal the jar with a lid and refrigerate for at least 4 hours, but preferably overnight (8-12 hours), until the chia seeds have absorbed the liquid and the pudding is thick and creamy.
  4. Before serving, give the pudding a good stir and check the consistency. If it's too thick for your preference, add 1-2 tablespoons of milk and stir until smooth.
  5. Divide into serving bowls or enjoy straight from the jar. Top with your favorite toppings like fresh berries, sliced bananas, granola, nuts, coconut flakes, or an extra drizzle of honey.
