Ingredients
  

  • 2 cups vanilla Greek yogurt chilled
  • 1 1/2 cups fresh strawberries hulled and sliced
  • 1 cup granola your favorite variety
  • 2 tablespoons honey plus extra for drizzling
  • 1/2 teaspoon vanilla extract
  • Fresh mint leaves for garnish (optional)

Method
 

  1. Prepare the strawberries by hulling and slicing them into 1/4-inch rounds. Reserve 4-6 of the prettiest slices for garnish.
  2. In a small bowl, stir together the Greek yogurt, honey, and vanilla extract until smooth and well combined.
  3. In clear glasses or mason jars, spoon 2-3 tablespoons of the yogurt mixture into the bottom of each glass, spreading it evenly.
  4. Add a layer of sliced strawberries over the yogurt, pressing a few slices against the glass walls for visual appeal.
  5. Sprinkle 2 tablespoons of granola over the strawberries, keeping it away from the glass edges to maintain visible layers.
  6. Repeat the layering process one more time: yogurt, strawberries, then granola, finishing with a final dollop of yogurt on top.
  7. Just before serving, top each parfait with remaining granola, reserved strawberry slices, a drizzle of honey, and fresh mint if desired. Serve immediately with a long spoon.
