Ingredients
  

  • 1 cup fresh strawberries hulled (or frozen)
  • 2 tablespoons honey plus more to taste
  • 1 teaspoon matcha powder culinary grade
  • 2 tablespoons warm water not boiling
  • 1 cup milk of choice cold
  • 1 cup ice cubes
  • optional: 1/4 teaspoon vanilla extract

Method
 

  1. Add the strawberries and 1 tablespoon honey to a blender. Blend on high until completely smooth, about 30 seconds. Taste and add more honey if you prefer it sweeter.
  2. Fill a tall glass with ice cubes, then pour the strawberry mixture over the ice until the glass is about half full. Set aside.
  3. In a small bowl, add the matcha powder and warm water. Whisk vigorously in a zigzag motion for 30-45 seconds until the matcha is fully dissolved and no lumps remain.
  4. Add the cold milk, remaining 1 tablespoon honey, and vanilla extract (if using) to the matcha mixture. Whisk until well combined and slightly frothy.
  5. Slowly pour the matcha milk over the back of a spoon held just above the strawberry layer to create distinct layers. The matcha will float on top.
  6. Serve immediately with a straw, or give it a gentle stir before drinking to blend the flavors together.
