Ingredients
  

  • 2 cups plain Greek yogurt full-fat
  • 3 tablespoons honey plus more for drizzling
  • 1 teaspoon dried culinary lavender buds
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups mixed fresh berries blueberries, raspberries, strawberries
  • 1 cup granola of choice
  • Fresh mint leaves for garnish optional

Method
 

  1. In a small bowl, combine the honey and dried lavender buds. Microwave for 15-20 seconds until the honey is warm and thin, then stir and let steep for 5 minutes to infuse the flavor.
  2. Strain the honey through a fine-mesh sieve to remove the lavender buds, pressing gently to extract all the flavored honey. Discard the buds.
  3. In a medium bowl, whisk together the Greek yogurt, lavender-infused honey, and vanilla extract until smooth and evenly combined. Taste and add more honey if you prefer it sweeter.
  4. If using strawberries, hull and slice them. Keep blueberries and raspberries whole for easier layering.
  5. To assemble, spoon 1/4 cup of the lavender yogurt into the bottom of each serving glass or jar. Add a layer of mixed berries, then a layer of granola.
  6. Repeat the layering once more: yogurt, berries, and granola. The parfaits should have 2-3 distinct layers depending on glass size.
  7. Drizzle the top with a small amount of plain honey for extra sweetness and visual appeal. Garnish with fresh mint leaves if desired and serve immediately for maximum crunch.
