  • 1/2 cup old-fashioned rolled oats
  • 1/2 cup milk of choice cold
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons almond butter creamy or crunchy
  • 1 tablespoon honey plus more for drizzling
  • 1/4 teaspoon vanilla extract
  • 1 pinch sea salt
  • 2 tablespoons sliced almonds for topping

Method
 

  1. In a mason jar or airtight container, combine the milk, Greek yogurt, almond butter, honey, vanilla extract, and sea salt. Stir vigorously with a spoon until the almond butter is fully incorporated and the mixture is smooth with no clumps.
  2. Add the rolled oats to the jar and stir until they're completely submerged in the liquid mixture. Make sure no dry oats are stuck to the sides or bottom.
  3. Seal the container tightly with a lid and refrigerate for at least 8 hours or overnight, allowing the oats to absorb the liquid and soften to a creamy, pudding-like consistency.
  4. In the morning, give the oats a good stir to redistribute any settled ingredients. If the mixture is too thick for your liking, add a splash of milk and stir until you reach your desired consistency.
  5. Top with sliced almonds and an extra drizzle of honey just before serving. Enjoy cold straight from the fridge or let sit at room temperature for 5-10 minutes for a less chilled version.
