Ingredients
  

  • 2 cups plain Greek yogurt full-fat
  • 2 tablespoons honey plus more for drizzling
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries hulled and sliced
  • 1/2 cup fresh blueberries
  • 1/2 cup fresh raspberries
  • 1/2 cup fresh blackberries
  • 1 cup granola cluster-style preferred
  • Fresh mint leaves for garnish (optional)

Method
 

  1. In a medium bowl, stir together the Greek yogurt, honey, and vanilla extract until smooth and evenly combined. Taste and adjust sweetness if desired.
  2. In a separate bowl, gently combine all the berries. Use a fork to lightly mash about one-third of the berries to release their natural juices, leaving the rest whole for texture.
  3. Spoon 2-3 tablespoons of the sweetened yogurt into the bottom of each serving glass or mason jar, creating an even layer.
  4. Add a layer of mixed berries over the yogurt, using about 2-3 tablespoons per glass. Gently press down to create contact with the yogurt.
  5. Repeat the layering process with another yogurt layer, then berries, until glasses are nearly full, ending with a yogurt layer on top.
  6. Just before serving, top each parfait with a generous layer of granola for crunch. Drizzle with additional honey if desired.
  7. Garnish with fresh mint leaves and a few reserved whole berries for an elegant presentation. Serve immediately while granola is crisp.
