If using strawberries, hull and slice them into bite-sized pieces. Gently toss all berries together in a bowl.
In a separate bowl, stir the Greek yogurt with vanilla extract and 1 tablespoon honey until smooth and creamy.
Spoon 1/4 cup yogurt mixture into the bottom of each serving glass or jar, spreading it evenly.
Add a layer of mixed berries (about 3 tablespoons per glass), then drizzle with a small amount of honey.
Sprinkle 2 tablespoons granola over the berry layer, pressing gently so it stays in place.
Repeat the layering process one more time: yogurt, berries, honey drizzle, and granola on top.
Garnish with a few whole berries and a mint leaf if desired. Serve immediately for crunchy granola, or chill for up to 1 hour for slightly softened texture.
