Ingredients
  

  • 2 cups plain Greek yogurt full-fat or 2%
  • 2 ripe mangoes peeled and diced into 1/2-inch cubes
  • 2 tablespoons honey plus more for drizzling
  • 1 cup granola your favorite variety
  • 1 teaspoon vanilla extract
  • 2 tablespoons fresh lime juice
  • Fresh mint leaves for garnish (optional)
  • 2 tablespoons toasted coconut flakes optional

Method
 

  1. In a medium bowl, whisk together the Greek yogurt, honey, and vanilla extract until smooth and evenly combined.
  2. In a separate bowl, toss the diced mango with lime juice to brighten the flavor and prevent browning.
  3. Divide half the yogurt mixture among 4 parfait glasses or mason jars, spreading it evenly across the bottom.
  4. Layer half the mango chunks over the yogurt in each glass, distributing them evenly.
  5. Add the remaining yogurt as the next layer, smoothing the top gently with a spoon.
  6. Top with the remaining mango chunks, creating a colorful crown on each parfait.
  7. Just before serving, sprinkle granola over the top of each parfait to maintain crunch.
  8. Garnish with fresh mint leaves and toasted coconut flakes if desired, then drizzle with extra honey. Serve immediately for best texture.
