Ingredients
  

  • 36 Oreo cookies 1 standard package, divided
  • 8 oz cream cheese softened to room temperature
  • 16 oz semi-sweet or dark chocolate chips
  • 1 teaspoon coconut oil or shortening optional for smoother coating

Method
 

  1. Reserve 4 Oreos for topping. Place the remaining 32 cookies in a food processor and pulse until they become fine crumbs with no large chunks remaining, about 30-45 seconds.
  2. Add the softened cream cheese to the cookie crumbs in the food processor. Pulse until the mixture is completely combined and forms a dough-like consistency that holds together when pressed, about 15-20 pulses.
  3. Line a baking sheet with parchment paper. Using a tablespoon-sized cookie scoop or spoon, portion the mixture and roll into 1-inch balls between your palms. Arrange on the prepared baking sheet.
  4. Refrigerate the truffle balls for at least 2 hours or freeze for 30 minutes until very firm to the touch.
  5. Melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring after each, until smooth and fluid. Stir in the coconut oil if using for a thinner consistency.
  6. Remove a few truffles from the fridge at a time to keep them cold. Using a fork or dipping tool, dip each ball into the melted chocolate, tap off excess, and return to the parchment-lined baking sheet.
  7. While the chocolate is still wet, crush the reserved 4 Oreos and sprinkle crumbs over the top of each truffle for decoration.
  8. Refrigerate the dipped truffles for 15-20 minutes until the chocolate sets completely. Bring to cool room temperature 10 minutes before serving for the best texture and flavor.
