Ingredients
  

  • 1 cup old-fashioned rolled oats
  • 1 cup milk of choice plus more for consistency
  • 3 tablespoons unsweetened cocoa powder
  • 1 tablespoon instant espresso powder
  • 3-4 Medjool dates pitted and chopped
  • 1 tablespoon chia seeds
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • Optional toppings: Greek yogurt shaved chocolate, sliced banana

Method
 

  1. In a small bowl, combine the cocoa powder and espresso powder with 2-3 tablespoons of warm milk. Whisk until smooth and no lumps remain, creating a concentrated mocha paste.
  2. Add half the chopped dates and 1/4 cup of milk to a blender. Blend on high for 30 seconds until completely smooth and creamy.
  3. In a large mason jar or bowl, combine the oats, chia seeds, and salt. Pour in the mocha paste, date-milk mixture, remaining milk, and vanilla extract.
  4. Stir vigorously for 1 minute until everything is evenly combined and no cocoa powder streaks remain. Fold in the remaining chopped dates for texture.
  5. Divide the mixture between 2 jars or containers with lids. Press down gently to ensure the oats are submerged in liquid.
  6. Cover tightly and refrigerate for at least 8 hours or overnight. The oats will absorb the liquid and thicken to a creamy, pudding-like consistency.
  7. In the morning, stir well and add a splash of milk if needed to reach desired thickness. Top with your favorite toppings and enjoy cold or warmed.
