Ingredients
  

  • 1/2 cup rolled oats old-fashioned or gluten-free
  • 1/2 cup milk of choice such as almond, oat, or dairy
  • 1/3 cup frozen cherries thawed and chopped
  • 2 tablespoons Greek yogurt plain or vanilla
  • 1 tablespoon chia seeds
  • 1 tablespoon pure maple syrup
  • 1/2 teaspoon pure vanilla extract
  • 1 pinch sea salt

Method
 

  1. In a mason jar or airtight container, combine the rolled oats, milk, Greek yogurt, chia seeds, maple syrup, vanilla extract, and sea salt. Stir thoroughly with a spoon until everything is evenly mixed and no dry oats remain at the bottom.
  2. Gently fold in the thawed and chopped frozen cherries, reserving a few pieces for topping if desired. The cherry juice will start to tint the oats pink — this is exactly what you want.
  3. Seal the container tightly with a lid and refrigerate for at least 4 hours, or ideally overnight (8-12 hours). The oats will absorb the liquid and soften to a creamy, spoonable consistency.
  4. In the morning, give the oats a good stir to redistribute any settled chia seeds and cherry pieces. If the texture is too thick, add 1-2 tablespoons of milk and stir again.
  5. Top with additional fresh or thawed cherries, a drizzle of almond butter, granola, coconut flakes, or a sprinkle of dark chocolate chips. Enjoy cold, or warm in the microwave for 45-60 seconds if you prefer.
  6. Store any remaining portions in the refrigerator for up to 4 days. The oats will continue to soften slightly over time but remain delicious and ready to grab throughout the week.
