Ingredients
  

  • 12 oz dark chocolate chips or chopped dark chocolate 60-70% cacao
  • 1 cup soft caramel candies unwrapped
  • 2 tablespoons heavy cream
  • 1 1/2 cups pecan halves toasted and roughly chopped
  • 1/2 teaspoon flaky sea salt optional for topping

Method
 

  1. Line a 9x13-inch baking sheet with parchment paper, allowing the paper to hang over the edges for easy removal later.
  2. Toast the pecans in a dry skillet over medium heat for 3-4 minutes, stirring frequently until fragrant and lightly browned. Roughly chop and set aside to cool.
  3. Melt 8 oz of the dark chocolate in a microwave-safe bowl in 30-second intervals, stirring between each, until completely smooth. Pour onto the prepared baking sheet and spread into an even layer using an offset spatula. Refrigerate for 10 minutes until firm.
  4. Combine the unwrapped caramels and heavy cream in a microwave-safe bowl. Microwave in 20-second bursts, stirring after each, until smooth and pourable, about 1-2 minutes total.
  5. Working quickly, pour the caramel over the chocolate layer and spread gently with the back of a spoon or offset spatula. Immediately sprinkle the toasted pecans evenly over the caramel, pressing them gently into the surface.
  6. Melt the remaining 4 oz dark chocolate using the same microwave method. Drizzle over the pecan layer in thin streams, then use a toothpick to create swirls if desired.
  7. Sprinkle with flaky sea salt if using. Refrigerate for 30 minutes until completely set.
  8. Lift the bark out using the parchment paper overhang. Let sit at room temperature for 5 minutes, then break into 24 irregular pieces using your hands or a sharp knife.
